I use it when it’s obvious what the type is, which means just about any time I’m not setting the variable by calling a method. Or when the type is ridiculously long.
I feel like you lose a lot of readability if you use var for everything. Oh cool you called GetCustomData and set it to a var, now I have to go look at the signature of GetCustomData to see what the type is or I have to have the code loaded up in an IDE.
Modern IDEs provide this information, if you hover with the mouse over the method.
I don’t know about you, but if I read the code I’m using the mouse to follow it and have no issues with vars this way. But if you program only with keyboard, there are also Shortcuts to show the pop-up.
I use var for the refactoring benefits. The fewer files you have to touch when changing a type means the less chance that you will cause merge conflicts with team mates while they are working on something orthogonal. I think its also easier to read when the type name is long.
The C# 9.0 implicitly typed new() syntax is interesting as an alternative for cases where you are doing instantiation, but it will take a while to become used to using that pattern.
Even C++ has the equivalent (auto) since 2011.

Without getting in details, it’s just simply logical that there must be good reasons why such features got implemented and recommended.
I use var:
For foreach loops
When the variable only lives for a few lines, so the declaration/initialization never reasonably goes off screen (same as the rule-of-thumb for single-letter variable names, basically)
When the type name is a mile long and the constructor is called on the same line anyway
I don’t use var when:
The variable survives scope boundaries
It only replaces a short/simple type name anyway
It’s part of a lengthy and complex process that spans more than about 20 lines
But as for style nazis, I have no tolerance. Unless code is drastically unreadable, there’s zero justification to be a jerk and demand conformance. Even when it comes to repositories, there are tools to normalize styles on check-in and set them back to a preferred format on check-out. Use them.
I use var where appropriate (long type name being one), but I hate the “IDE sovles readability” counter argument with passion. No, just because there are tools to help me decipher your code doesn’t make your code readable. And these tools are far less prevalent than plain text editors/displays. I shouldn’t have to locate (which takes real human effort with large code base) and load (which can take real computing resource with large code base) the correct project/solution file in an IDE to review your code when I see a review request either.
I always use var. Much easier than typing long class names and it looks better without a thousand repeated words everywhere.

Maybe I am old-school. I never use var. but u/wllmsaccnt‘s point is very valid from a merge point of few. Never thought of it in that way
I also lean towards not using var. And while I get the argument that using var makes it easier to change a variable’s type. I have to ask if that is something we actually want.
Of course, var is just sugar for what’s going on, so it’s not like broken code is going to compile anyway.

I only use var for generics. Everything else is explicitly declared at declaration. Whats the point of having a strongly typed language if you aren’t going to strongly type it? In that case I’d recommend JS or Python.
Var and strong typing are not related. Var is merely a variable whose type is implicitly set from the first type to which it is assigned. From declaration onwards, it’s strongly typed. If you think that an int var can be assigned a string value (as can be done in untyped languages) then you should go and do some more learning.
I’m not pro var, but I have to say
var myVariable = new SomeType();
is very different from
myVariable = new SomeType();.
The first tells me it’s a new variable, and it lives in the current scope. The second tells me it’s declared earlier, and it may have a larger scope.
